Thai Carrot Soup *Gluten-Free* *Vegan*

Ingredients:

  • 10 Oz. Carrots, shredded
  • 1 Cup Onion, diced
  • 1 Cup Celery, diced
  • 1 Tsp. Fresh Ginger, grated
  • 1 Tsp. Orange Zest
  • 3 Tbsp. Olive Oil
  • 14 Oz. Canned Coconut Milk
  • 2 Cups Vegetable Stock
  • 1 Tbsp. Honey
  • 1/4 Cup Fresh Orange Juice
  • ½ Tsp. Tabasco
  • ½ Tsp. Salt
  • ½ Tsp. White Pepper
  • 1 Tsp. Curry Powder (optional)


Additional Items Needed:
  • 2 Quart Microwave Safe Bowl

Before:
In the bowl combine the carrots, onion, celery, ginger, orange zest, olive oil, Tabasco, salt and pepper.

Stir until oil evenly coats the vegetables.

Place in microwave. Enter code. Press start.

During:
When prompted by the microwave to "Follow package instructions", add Coconut milk, Stock, and Honey. Stir and return to microwave.

After:
Add the orange juice and optional curry powder and blend until smooth.


Serves: 4
Notes:
Caution! The dish will be hot.
