Pumpkin Cheesecake Bars *Vegetarian*

Pumpkin Cheesecake Bars *Vegetarian*


For Crust:
  • 2 Cups Graham Cracker Crumbs
  • 2 Tbsp. Flour
  • 3 Tbsp. Sugar
  • 1/4 Cup Butter, melted

For Filling:
  • 8 Oz. Cream Cheese, softened
  • 1 Egg
  • 1 Egg White
  • 1 Cup Canned Pumpkin
  • 1 Tsp. Vanilla Extract
  • 1/3 Cup Sugar
  • 1 Tsp. Cinnamon
  • ½ Tsp. Nutmeg
  • 1/4 Tsp. Salt

Additional Items Needed:
  • Medium Mixing Bowl
  • 8x8 Microwave Safe Baking Dish
  • Whisk or Electric Mixer


Grease the microwave safe baking dish with butter.

For Crust: Mix together graham cracker crumbs with the flour, 3 tbsp. sugar and butter. Press the crust mixture into an even layer on the bottom and sides halfway up a buttered 8x8 microwave safe dish.

For Filling: In a mixing bowl combine softened cream cheese, egg, egg white, canned pumpkin, 1/3 cup sugar, cinnamon, nutmeg and salt. Mix until fluffy. Pour mixture over the graham cracker crust. Cook.

Chill in the refrigerator for 2-3 hours. Cut into squares.

Serves: 6
