Pumpkin Bread in a Bundt Pan *Vegetarian*

Ingredients:

  • 4 Tbsp. Butter, softened
  • ½ Cup White Sugar
  • 1/4 Cup Brown Sugar
  • 1 Large Egg
  • ¾ Cup Canned Pumpkin
  • ½ Cup Greek or Plain Yogurt
  • 1 Tsp. Vanilla Extract
  • 11/4 Cups All Purpose Flour
  • ½ Tsp. Baking Soda
  • ½ Tsp. Baking Powder
  • 1 Tsp. Cinnamon
  • ½ Tsp. Allspice
  • 1/4 Tsp. Nutmeg


Additional Items Needed:
  • Medium Mixing Bowl
  • Mastrad Bundt Cake Pan
  • Hand Mixer or Whisk
  • Cooking Pan Spray

Before:
In a mixing bowl mix the butter, white sugar and brown sugar until combined (medium speed for hand mixer).

Next mix in the egg, vanilla extract yogurt and pumpkin.

Slowly mix in the flour, baking soda and baking powder, cinnamon, nutmeg and allspice (low speed for the hand mixer) until smooth.

Lightly spray the bundt cake pan with cooking spray.

Pour cake batter evenly into the bundt cake pan.

Place in the microwave oven.

After:
Allow to rest for 5 minutes. Then turn over onto a large plate.


Serves: 4

Caution! The dish will be hot.
