Potato Leek Soup with Ham


  • 3 Leeks, cut 1/4 inch
  • ½ Cup Onion, diced
  • 1/4 Cup Butter
  • 3 Tbsp. Corn Starch
  • 1 Medium Red Potato, diced
  • 1/4 Cup Ham, diced
  • 1½ Cup Chicken Stock
  • 1 Cube Chicken Bullion
  • 1/4 Cup Heavy Cream
  • ½ Tbsp. Salt
  • ½ Tbsp. Pepper

Additional Items Needed:
  • 2.5 Quart Microwave-Safe Bowl


In the microwave-safe bowl combine the leeks, onion, and butter.

Stir and place in microwave.

Enter code. Press start.

When prompted by the microwave to "Follow package instructions", add the corn starch and stir.

Then add the potato, ham, chicken stock, and bullion .

Stir in Heavy Cream.

Serves: 4
Caution! The dish will be hot.

Use a thermometer to confirm that microwave foods have cooked to safe temperatures of greater than 165º F
