Meatless Chili *Vegan*
Additional Items Needed:
- ½ Cup Onion, diced
- ½ Cup Celery, diced
- 1 Green Bell Pepper, diced
- 1 JalapeÃ±o, diced and seeded
- 1 Clove Garlic, chopped
- 2 Tbsp. Olive Oil
- 15 Oz Can Black Beans
- 15 Oz Can Tri-Bean Blend
- 14.5 Oz Can Diced Tomatoes
- 1½ Cup Vegetable Stock
- 1 Cup Meatless Veggie Crumbles
- 4 Tbsp. Corn Meal
- ½ Tbsp. Salt
- ½ Tbsp. Pepper
- 2.5 Quart Microwave-Safe Bowl
In the microwave-safe bowl combine the celery, onion, bell pepper, jalapeno, garlic, and olive oil.
Place in microwave. Enter code. Press start.
When prompted by the microwave to "Follow package instructions", add all remaining ingredients and stir.
Place back in the microwave and press start.
Caution! The dish will be hot.
Use a thermometer to confirm that microwave foods have cooked to safe temperatures of greater than 160º F
