Juicy Lucy Meatloaf

Juicy Lucy Meatloaf


  • 1.5 Lb. Ground Beef
  • 1/3 Cup Onion, diced
  • 3 Eggs
  • 2/3 Cup Bread Crumbs
  • 1 Tsp. Italian Seasoning
  • 2 Sticks String Cheese, cut in half
  • 4 Slices Bacon
  • 1/4 Cup BBQ Sauce
  • ½ Tbsp. Salt
  • ½ Tbsp. Pepper

Additional Items Needed:
  • Mixing Bowl
  • 8x8 Glass Dish


Mix together the beef, onion, eggs, bread crumbs, Italian seasoning, salt, and pepper.

Divide mixture into four equal portions and form into loaves.

Push the string cheese into the center of each loaf and seal the opening.

Wrap each loaf with one slice of bacon.

Place all four loaves in the 8x8 glass dish.

Place in microwave. Enter code. Press start.

When prompted by the microwave to "Follow package instructions", pour BBQ sauce over the meatloaf.

Let sit for 5 minutes.

Serves: 4

Use a thermometer to confirm that microwave foods have cooked to safe temperatures of greater than 165º F
