Italian Seafood Stew *Gluten-Free*
Additional Items Needed:
- 1 Lb. Tilapia, cut into 1-11/4 inch peices
- 1/4 Lb. Bay Scallops
- 1/4 Lb. Shelled Mussels or Clams
- 1 Cup Onion, diced
- 1 Cup Celery, diced
- 1/4 Cup Butter, softened
- 1 Clove Garlic, chopped
- ½ Cup Tomatoes, chopped
- 1 Tsp. Dried Oregano
- ½ Tsp. Red Pepper Flakes
- 2 Cups Seafood Stock
- ½ Tbsp. Salt
- ½ Tbsp. Pepper
- 2 Qt. Microwave-Safe Bowl
In the microwave-safe bowl mix together the onion, celery, garlic, and butter.
Place in microwave. Enter code. Press start.
When prompted by the microwave to "Follow package instructions", add remaining ingredients, mix and return to microwave.
Caution! The dish will be hot.
Use a thermometer to confirm that microwave foods have cooked to safe temperatures of greater than 160º F
