Italian Seafood Stew *Gluten-Free*

Ingredients:

  • 1 Lb. Tilapia, cut into 1-11/4 inch peices
  • 1/4 Lb. Bay Scallops
  • 1/4 Lb. Shelled Mussels or Clams
  • 1 Cup Onion, diced
  • 1 Cup Celery, diced
  • 1/4 Cup Butter, softened
  • 1 Clove Garlic, chopped
  • ½ Cup Tomatoes, chopped
  • 1 Tsp. Dried Oregano
  • ½ Tsp. Red Pepper Flakes
  • 2 Cups Seafood Stock
  • ½ Tbsp. Salt
  • ½ Tbsp. Pepper


Additional Items Needed:
  • 2 Qt. Microwave-Safe Bowl

Before:
In the microwave-safe bowl mix together the onion, celery, garlic, and butter.

Place in microwave. Enter code. Press start.

During:
When prompted by the microwave to "Follow package instructions", add remaining ingredients, mix and return to microwave.


Serves: 4
Notes:
