Indian-Style Chicken Curry *Gluten-Free*
Additional Items Needed:
- 1 Lb. Chicken Breast, cut into small pieces
- 1/4 Cup Butter
- ½ Cup Celery, diced
- ½ Cup Onion, diced
- ½ Cup Carrots, diced
- 2 Cloves Garlic, diced
- 1 Tsp. Garam Masala
- 1 Tsp. Turmeric
- 1 Tsp. Fresh Ginger
- 15 Oz. Canned Chickpeas, pureed
- 1/4 Cup Red Lentils
- 2 Cups Chicken Stock
- 1/4 Cup Coconut Milk
- 2.5 Quart Microwave-Safe Bowl
In the microwave-safe bowl combine the chicken, butter, celery, onion, carrots, garlic, ginger, and spices.
Stir and place in microwave.
Enter code. Press start.
When prompted by the microwave to "Follow package instructions", add the chickpeas, lentils, and chicken stock & stir.
Place back in the microwave and press start.
Stir in the coconut milk.
Caution! The dish will be hot.
Serving Option: Serve over rice or as a soup.
Use a thermometer to confirm that microwave foods have cooked to safe temperatures of greater than 165º F
