Curried Cod with Summer Squash *Gluten-Free*
Additional Items Needed:
- 1/4 - 1/3 Lb. Cod Fillet
- 1 Tbsp. Shallot, sliced
- 2 Tbsp. Olive Oil
- 2 Tbsp. Red Pepper, julienned
- ½ Tsp. Fresh Ginger
- ½ Tsp. Garlic
- 1/3 Cup Seafood Stock
- 1/3 Cup Coconut Milk
- 1 Tsp. Turmeric
- 1 Tsp. Garam Masala
- 1/4 Tsp. Cinnamon
- 1 Tsp. Lemon Juice
- ½ Cup Summer Squash, sliced
- 1 Tsp. Salt
- 1 Tsp. Pepper
- Mastrad 9x9 Silicone Square Baking Dish with Cover
- 1 Qt. Microwave-Safe Bowl with Cover
In the steam cooker or add shallot, olive oil, red pepper, ginger, garlic, stock, coconut milk, turmeric, garam masala, cinnamon and lemon juice.
Stir then add the fish filet.
Place in microwave. Enter code. Press start.
When prompted by the microwave to "Follow package instructions", flip the fish over and add sliced summer squash.
Re-cover, place back in microwave and press start.
Caution! The dish will be hot.
Use a thermometer to confirm that microwave foods have cooked to safe temperatures of greater than 160º F
