Cod with Lima Beans *Gluten-Free*

Ingredients:

  • 1    6 Oz. Fillet Cod
  • 1/4 Cup Red Onion, diced
  • 2 Tbsp. Sun Dried Tomato, cut into strips
  • 1 Lemon, sliced 1/4 inch
  • 2 Tbsp. Butter
  • 1/4 Cup Frozen Baby Lima Beans
  • 2 Tbsp. White Wine
  • ½ Tbsp. Salt
  • ½ Tbsp. Pepper


Additional Items Needed:
  • Microwave Steamer Bag (We used Ziploc Zip'n Steam Medium Bags)

Before:
Place all ingredients in the microwave steamer bag.

After:
Allow to rest in bag for 2 min.


Serves: 2
Notes:
Caution! The dish will be hot.

Use a thermometer to confirm that microwave foods have cooked to safe temperatures of greater than 160º F
